At Tenute Girolamo with the Winemaker

I reconnected with Teo D’Apolito in the fall of 2025 and revisited several wineries we had spent considerable time at back in 2023. On this particular day, I tagged along as Teo carried out a series of scheduled tasks at Tenute Girolamo. We began in the fermentation room, tasting both white and red wines at various stages of fermentation. While Teo discussed the results with the resident enologist, I explored the facility, capturing photos and video of the bottling area as well as the cellar, located 60 meters underground, where wines are aging in oak barrels.

From there, we headed to the vineyard just outside Martina Franca, where Teo collected additional samples of Syrah, Merlot, and Primitivo directly from the vines for laboratory analysis. By total vineyard area, Tenute Girolamo is the largest estate in the Valle d’Itria region of Puglia.

It’s always a pleasure to shadow Teo—every time I tag along, I walk away having learned something new.
