I spent the better part of a day at this organic winery with Teo D”politico, the winemaker. The visit to the winery comprised of tastings of white, rosé, and red wines from fermentation tanks at various stages of fermentation, blending trials to craft a bulk wine, an inside look at the Appassimento (Pantelleria) method used for certain grape varieties, and the process of removing grape skins from the fermentation tanks.
